一、T-bone T骨牛排&Porterhouse 上等腰肉牛排

T骨和上等腰肉是从短腰部切下来的牛排。两个牛排都包括一个“T”形腰椎，每侧有腹部内斜肌。T骨牛排更靠近前部，并含有较小的里脊肉~

二、Sirloin 沙朗牛排

沙朗牛排在英国指牛胸脊肉部分，肉质细嫩度次于菲力牛排，售价也较低于菲力牛排，上端部分的西冷牛排较为鲜嫩，售价也会贵一些~

三、Filet 菲力牛排

菲力牛排是牛排的一种，在牛柳的末端，由于这个部位的肌肉不是负重的肌肉，结缔组织比较少而较软嫩，通常被认为是牛肉最嫩的部位，而且每头牛只能切出4至6磅，因此价钱也比较昂贵~

四、Rumb steak 后腿肉排

后腿是牛身上运动较多的部位，基本上都是瘦肉，肉质较硬~

五、Flank steak 牛下腹排
